Here, Executive Chef Jonathan Maza has crafted a Modern Asian dining experience that has roots in Japanese cooking but which boldly also explores ingredients and techniques from other Asian regions. He says, "Our concept for Signature was to trace our roots back to Japan, where much of our inspiration lies, but to plant our feet throughout the Asia-Pacific region. By carefully blending the distinct, regional flavour profiles of various Asian cuisines, we created something entirely new yet assuringly familiar."
According to him, every ingredient, every method, and every dish has an essence, a soul, which must come through in the end. Taking LuxuryHunt on an exclusive back-of-house tour, the Hawaiian-born chef (he previously worked with NOBU around the world) proudly speaks of the effort and detail that went into the creation of Signature. And the tasting menu that followed shows that the proof is in the pudding – with delectable dishes that represent an impressive marriage of tastes and textures, using only the finest local and imported ingredients.
The menu is divided into 'Cold', 'Tempura', 'Small Plates/Sides', 'Hot' and 'Dessert' sections, complemented by an extensive New World-inspired wine list, rare sakes and Japanese cocktails. It's fine dining at its best with service to boot – and we can't wait to go back!
